I used to skip making these and default to fried rice instead, but once I tried them, they became one of my favourite ways to use up rive leftovers. Just rice, cheese, parsley, garlic, egg, and breadcrumbs, baked until crispy and golden. Kids can help roll the balls too, so it's a fun one to make together.
Ready in about 30 minutes.
