Then, few days ago I finally tried it, mostly out of curiosity, and I remember standing at the counter completely stunned. It worked! That's the salad I want to share with you today. Watermelon, feta, fresh mint, and a good squeeze of lime, all ready to serve in just five minutes. The watermelon is sweet, the feta brings the salt, the mint keeps it cool and green, and the lime ties the whole thing together and makes it taste fresh and vibrant.
Plus, there is no cooking, how amazing is that? If you want a make ahead trick, cut the watermelon into cubes and store it separately in the fridge, then toss everything together right before you serve it. Watermelon releases a lot of juice once it sits, so assembling it fresh keeps it from getting watery.
