Hey Reader,
Last week I was standing at the stove with a bag of broccolini and green beans, trying to figure out something other than steaming them again. That is when I remembered a trick I had not used in a while - tempura.
If you think you can only get this at a fancy restaurant, I get it. But tempura vegetables are easy - they are really just your favourite veggies dipped in a light, bubbly batter and fried until crispy and golden. No special skills are needed, and they come together faster than you think.
The secret is the sparkling water. Those bubbles are what gives the batter that airy texture, so it fries up thin and shatters the second you bite into it. Broccolini, snap peas, green beans, and sweet potatoes all work amazing here.
Make sure you let the crispy veggies rest on a cooling rack. Paper towel or a napkin can trap the steam underneath, and that is what turns a crispy tempura soft again.
I served mine with a spicy mayo for dipping and they were gone before dinner even started.
