Hey Reader, Can I be honest for a second here? There were many days I can remember when I served up a dinner of boxed mac & cheese… or just scrambled eggs. Yes, too many times to count. Just a simple 5 minutes meal that got the job done. Why? Because I was exhausted! Even boiling pasta felt like a huge mountain to claim. And if you’ve ever stood in front of your fridge after work, thinking “I can't do this tonight”, then you get it. Cooking every day is not always an easy thing. Add in work, laundry, hungry kids, late emails or just the pressure to serve different and healthy meals - and suddenly takeout starts looking like the easiest (and most tempting) thing to do.
But here is something I’ve learned, and I want to gently pass it to you: Cooking doesn’t have to be a stressful, hours-long ordeal It can actually be simple, quick and maybe even… fun? Not because life magically slowed down and got easy, but because I shifted how I think about the dinner prep. It all starts with your perspective, the appreciation of the small wins and a good plan that works for you! I’m so excited to share more soon, because this is exactly what my new course is all about. You don't have to be a professional chef - but you need a better way to think about feeding the people you love... and a little nudge in the right direction. 👀 Stay tuned for more 🙌 In a meantime, how about checking few early summer recipes? I’ve summarized up few really good meals - all in one place just for you👇 Fiesta Mango SalsaThis mango salsa is an incredible flavour fiesta, blending sweet, tangy, and zesty notes into one delicious and so simple Mexican-inspired dish. Simple Grilled OkraI used to run a mile to avoid it, but now I’m a big fan. You should add okra to your meals as often as you can. It’s super healthy, packed with vitamins and minerals, and has lots of fibber to help with digestion. Plus, it’s easy and simple to add to different dishes.
