There were many days I can remember when I served up a dinner of boxed mac & cheese… or just scrambled eggs. Yes, too many times to count. Just a simple 5 minutes meal that got the job done.

Why? Because I was exhausted!

Even boiling pasta felt like a huge mountain to claim. And if you’ve ever stood in front of your fridge after work, thinking “I can't do this tonight”, then you get it.

Cooking every day is not always an easy thing. Add in work, laundry, hungry kids, late emails or just the pressure to serve different and healthy meals - and suddenly takeout starts looking like the easiest (and most tempting) thing to do.

But here is something I’ve learned, and I want to gently pass it to you:

​Cooking doesn’t have to be a stressful, hours-long ordeal​
It can actually be simple, quick and maybe even… fun?

Not because life magically slowed down and got easy, but because I shifted how I think about the dinner prep.

It all starts with your perspective, the appreciation of the small wins and a good plan that works for you!
