It takes about 5 minutes to pull together, with ingredients you likely already have, and the dressing... that yummy sesame and soy dressing makes the whole thing come alive. It works as a side dish alongside grilled chicken or fish, or as a light lunch all on its own. And yes, it is surprisingly filling.

Sometimes the simplest things are just the best, right?
