Yesterday my day was saved by a tiny bit of thinking ahead.
I was so exhausted after work, and by the time dinner was done, I already had to figure out what to make the next day. No leftovers to fall back on, so something had to give.
So I did the smallest bit of prep based on energy I had left. I marinated some meat, sliced it thin, and tucked it into a container. Then I chopped up some vegetables sitting in the fridge and popped them into another one. That was it, maybe five minutes total.
The next day, I came home, heated a bit of sesame oil, whipped up a quick soy-based sauce, and had a full chow mein situation on the table in no time. I genuinely surprised myself. Dinner came together that fast just because of few minutes of prep the night before. So glad I didn't have to do all of that on the same day ๐
