Growing up, potatoes were on our family table almost every day, and somebody always had to peel them. Most of the time that somebody was me.
I still love potatoes, but peeling a big pile of them on a busy evening? No thanks. So when I found baby potatoes, I was sold. All it takes is to wash them, boil them and roast them. The skin is so thin that it turns into the best crispy part.
The first time I made them for a holiday dinner, they were the first dish to disappear. Because they are cute and flavourful things.
Why are these potatoes on repeat
There is no peeling and no cutting, and you only need one pot. Well is if that hasn't sold them yet - what would?
Guests running late? No need to stress
There is an easy way to keep them warm for up to 2 hours without losing that crispy skin. It saved my holiday dinner, and it might save yours too. I will give you a hint (Dutch oven).
