Hey Reader,
When I was little, my grandma had a smart way of getting me to eat my vegetables. She never argued or bargained with me. She simply set a plate of cauliflower on the table, covered in crispy breadcrumbs.
I had no idea I was eating something good for me, I just knew it was crunchy and so tasty that I always asked for more.
A little piece of my childhood, now shared with you
I still make her crispy cauliflower today, with one small twist of my own: a sprinkle of parmesan on top. Itโs the side dish I come back to when I want something simple that makes a regular dinner feel special.
The best part is how little it asks of you. Here is the whole idea:
- Cook the florets, then let them steam dry so the topping stays crisp.
- Toast the breadcrumbs in sizzling butter until crispy and golden.
- Spoon the crumbs on top, add parmesan, some chopped parsley, and serve.
Itโs a great way to use up leftover bread, and itโs easy to make vegan with a couple of simple changes.
Serve it on its own as a snack, next to roast chicken, or with whatever is already on your dinner plan. If your kids are anything like I was, it might just become their favourite vegetable.
