It was the fennel πŸ€”

Hey Reader,

Fennel soup sat on my to-do list for the longest time, and I was a bit intimidated by it. Why? I honestly have no idea. Fennel just felt like one of those ingredients I’d somehow get wrong.

Then I came home from work completely drained and wanting something warm, healthy, and easy. I opened the fridge and found a fennel bulb I bought few days ago, some carrots, and one lonely sweet potato. Not much of a dinner plan, but it turned into one.

The oven does the work

I washed and chopped everything, slid the pan into the oven, and went to change and catch my breath. When I came back, the veggies were amazingly caramelized and sweet and the kitchen smelled amazing. Into the Dutch oven they went with some broth, few minutes to simmer, a quick blend, and dinner was ready.

It’s creamy without any cream, just roasted veggies blended smooth and topped with a dollop of sour cream and crunchy toasted seeds.

The best part?

My husband was seriously amazed and went back for more. He couldn’t believe fennel could taste like that.
