Summer BBQ season is officially here, and to me that means figuring out what to put on the grill that everyone will like, without spending the whole day in the kitchen.
So this week, I've got you covered for your next backyard BBQ party. Two skewer recipes, both stupidly easy, and both the kind you can prepare ahead and just throw on the grill when guests show up.
Thai Coconut Chicken Skewers
These are on repeat in my home every summer. A simple coconut lime marinade does most of the work overnight in the fridge, then a quick coconut glaze goes on right off the grill for that extra hit of flavour. Tender, a bit tropical, and they disappear ridiculously fast.
Honey Garlic Pork Skewers
Sticky, savoury, and ready in about 20 minutes once the pork has marinated well. Pork tenderloin keeps things lean and tender, and the honey garlic glaze at the end makes them look way more impressive than the effort they actually took.
Try them both, set them out together, and let your guests pick their favourite. Either way, you will be the one relaxing with a drink instead of standing over the grill the whole time stressing.
