Hello, again, So last Sunday I roasted a whole chicken - classic move. Monday night, I pulled the leftover meat off the bone, tossed it into a quick stir fry with whatever vegetables I had, and served it over rice. Done in 15 minutes. Tuesday? Same chicken. Shredded into a simple soup with some broth, pasta, and lemon. One chicken. Three dinners. Amazing, right?
